Lentil Soup Recipe


I was on the hunt for a lentil soup recipe. It has TONS of protein, and is so good for you, not to mention yummy. I was thinking back to high school when I went to my friend Caitlin's house. I was over there constantly, and her mom made the BEST lentil soup. I decided to ask her for the recipe- and being the amazing lady she is, not only gave me the recipe, but brought some lentils over for me! Red lentils are very hard to find around here, and they MAKE this recipe! 

As far as difficulty, this recipe is about as easy as they come. You stick everything in a pot, and let it cook. Garnish with a little fresh dill, and you have a low calorie, delicious protein packed meal! 


Ingredients:

2 cups lentils (I use the red ones)
6 cups water
1 large onion, chopped
2 cloves garlic, minced
1/2 tsp pepper
1/2 tsp oregano
28 oz can tomatoes ( I use diced)
2 Tbsp fresh dill or 1 Tbsp dill seeds ( I use fresh)
2 bay leaves

Directions
Put all ingredients in large pot and bring to a boil, then simmer for 2-2 1/2 hours, stirring occasionally. Makes 10- 1 cup servings.

A little trick I learned- to keep fresh herbs from going to waste, wrap them in paper towel and freeze. Next time you need some, take what you need, wrap it back up and stick it back in the freezer. This saves TONS of money, and the herbs stay very fresh!


I am planning on packing this soup up in individual containers and having it ready for lunch next week. Yummm!

Product review - York Sign Shop

I am not feeling well at ALL today- so I am going to post this product review. Hopefully I'll be up and running tomorrow!



Early December I was looking around on Etsy for something to hang my future running bibs and medals on. I stumbled upon York Sign Shop and loved the wooden signs. I received a gift certificate for Christmas, and ordered!

Tamara & Nate were so helpful when I was choosing which board I wanted. They hand craft everything, and it's all hand painted. You can customize everything! They have tons of colors, fonts, and sizes of boards to choose from. 

 Early on I knew I wanted a Bible verse, but I was worried it would be too long. I shortened the verse to say, "All things are possible... Mark 9:23." 
 It looks so lonely with only one bib, but more are coming very soon! :)

Cone of shame

My poor dog. We were hoping to take off his cone last night. We tried for a little bit, and he just kept licking his privates! HAHA! It opened up the wound a little bit, so we have to leave the cone on a few more days until it is healed. 

Since the surgery (a week since Monday) he has calmed down quite a bit. I looked over and laughed at this last night-
Yep. Sleepin.

I posed to by FB page yesterday,
 "Just keep swimming" and Jeremiah 29:11 are repeating over and over in my mind today. Just have to trust in Him.
A friend of mine told me that I should add in Romans 8:28. Definitely fits! I don't talk much about my job on my blog, and it will stay that way. I absolutely adore my kids. Seriously, I love every single one of those kiddos. They make me smile everyday. They give me hugs exactly when I need them. I'm trying to keep THEM in mind even when the other parts of my job get me down. THEY are why I am in this profession. 

Along with some of the stress of work, I am also-somehow-sick. AGAIN! I get sick more than anyone else I know. In all seriousness. It is ridiculous. Another sore throat, slight fever, and headache. Ick. I am headed to the specialist next month to see if taking out my tonsils would be a good choice. I would have plenty of time to recuperate in the summer, and hopefully would miss a LOT less work, so I'm all for it. We shall see!

My challenge is going really well! I decided that I am going to stay off the scale until the cleanse is up. The first few days were hard, I have been HUNGRY all the time. I've been trying to snack a lot at school so I'm not so ravenous when I get home from work. It's been helping a lot! Drinking tons of water helps too, although restroom breaks unfortunately are hard to come by. Make sure to contact Bryan! He is SUPER helpful and can answer all of your questions. soda can cause...death?

Days 2 & 3 of my challenge went pretty well! On Saturday we went to a steakhouse to celebrate birthdays on Andrew's side of the family. I had a 6oz fillet, baked potato, and salad. I had cheese and bacon on the salad, which isn't great- but I did pretty well considering. 

Sunday we then went to celebrate birthdays on the Drudge side of the family. (lots of birthdays!) We went to El Camino Real restaurant. This one was hard for me to make good choices, but I did it! I ordered a dish called "Poco Loco." I just skipped the tortillas and rice. It was yummy!

I was up super early before church Sunday and was ready to head to rehearsal to sing.  Bad news bears- I woke up with no voice again. :( I used the extra time I had to blog a little and went to FB to look at my gym's site when I saw this...

The cable is finally working on the cardio machines!!!!! This was just what I needed, A nice push to get back to the gym. I know that sounds completely lame, getting excited about TVs on a treadmill, but if you've ever tried running over 3 miles on a dreadmill you will understand. It is AWFUL. Hopefully I can pound out more mileage this week.

I also found this while I was searching around-

I've always known soda/pop was bad for you. I haven't had any pop since i've started the challenge. I don't drink a ton anyway, but I'm going to try very hard to stay away even after my challenge is finished. I think it's funny how some people pick out one bad thing, and make a huge deal whenever someone else eats/drinks it. Like artificial sweeteners. It's like you are going to keel over and die right there if you consume any of it. Yes, we all know these things are bad. Isn't it all about moderation? For me, pop never makes me feel GOOD, so I am going to stop drinking it.  In my opinion, if drinking diet sodas keeps you away from eating an entire cake? Go for it. Do what works best for you!

Day 1

My challenge started today. I stayed home from work today with no voice. Turns out it was a good thing I did, as a migraine came and visited for a few sweet hours. Awesome.

After it subsided, I took a shower and did my measurements, weight, and before pictures.

24 day challenge

I am in a rut. I can't seem to keep myself away from sugar, bread, and anything unheatlhy. I'll have a great day, and then do 10X worse the next day. I just feel disgusting and tired. I decided to ask for help. This is where Brian came in.

Brain was willing to let me try the 24 day challenge. I tried it one time before, but cheated while I was on it, and gained it all back when I was done. What a complete waste! This time is going to be different. I am determined to give myself the effort and focus my body deserves. I don't need a a year long program, I just want a short "kick start" to get me back on track. 

That's what I love about this challenge.  It’s a specified amount of time and it’s a program that keeps you busy taking supplements and protein shakes and eating healthy snacks. Advocare is a program used by the NCAA and NFL and other sports agencies because it’s a high quality nutritional program. The high protein supplements keep you from losing valuable muscle, which you need in order to burn more calories. The program costs about $9/day but because you won’t be buying sodas and coffees and doughnuts, it quickly becomes more affordable.

My challenge consists of two "phases." The first is a 10 day cleanse, and then days 11-24 are the "max" phase. 

The program comes with 
  • One box of Herbal Cleanse
  • One bottle of OmegaPlex®
  • Two boxes of AdvoCare Spark®
  • One box of Meal Replacement Shakes
  • Your choice of one box of MNS® Max 3, C, or E (I am doing MAX C)
I will not be getting the spark drinks- as I don't drink much caffene. These are WONDERFUL if you drink a lot of coffee or energy drinks to get through the day. Even if you don't, spark can really help with energy and even sharpens your mental focus. I didn't like the way it made my body feel, so I didn't order it this time. (I don't do well if I even have a bit of an energy drink, too much coffee, or even an apple + coffee!) I still have a box of spart left from the last time I tried the challenge, so If I need a pick-me-up that's what I will turn to. 


I am also adding catalyst as well for better results. Catalyst words to feed muscles, not fat, leaving your body more tones and better defined. Brian recommended this, and explained that it puts a shield around your muscles and only lets your body burn fat. 

I will be updating you on my progress and how it is going each day! I am 100% committed to following this and not taking even a day off. If I feel at all weak, I might day a day off exercising, but you will NOT see me eating anything I'm not supposed to.

Good/ Bad Surprises

I had a major surprise when I got on the scale yesterday. Remember how I said I went up 8 lbs? Well, that was from when I weighed myself last week. Got on the scale yesterday and realized I wasn't up that much- actually less than five. Still up, but not as much as I'd thought. 

 (Disregard my toes, they are disgusting.)

This weekend I opened up my mailbox and saw something that WASN'T a bill! This in itself is super exciting. 

 It was a card from a reader, and a member of the fit camp I am a part of. Yep, made me cry. Such a cool random act of kindness from a stranger. 
The card came at the perfect time. We had just had a horrible surprise earlier in the week. We are working on paying off our student loans, and most of mine are through Sallie Mae. Well, something went wrong when I tried to pay online, and they quadruple charged me. Yep, you read that right. QUADRUPLE. I wont go into all the details, but we follow Dave Ramsey's system of debt snowballing, and we have a small emergency fund in case something unexpected happens. Let's just say- we are VERY strapped right now. We are praying the refund comes very soon. So Becky, thanks for shining a little light down on this household! :) 



Every year I try to schedule all of my appointments for MLK Jr. day, and this year my day was FULL! Hair, dentist, orthodontist, veterinarian, and doctor's office. My poor little Jeffrey was neutered today. I swear it's harder for me than for him. He has to wear a cone since he wants to lick every chance he can get. Poor guy. I felt like the worst person in the universe on the way to the veterinarian. He was SO excited. :( Little did he know... he was in for a surprise. 

What was the best/worst surprise you've ever had? Can't be as bad as getting your privates cut off, right?

Skinny 2 ingredient pancakes

Pancakes out of eggs and bananas? Sounds like a trick. Trust me- these are so good! 

All you need is 1 medium banana, and one egg. I had Egg Beaters on hand, so I used 1/4 a cup. 

Mash up the banana with a fork. 

 

Spray a pan with non-stick spray. 



Heat the pan to medium low.

Add the egg to the mashed banana
 
mix well 


 Add the mixture to the pan. NOTE: DO NOT dump the entire thing in, like I did. It ended in disaster. 
DO NOT DO THIS!
Trust me, blob a little in at a time. I made 2 at a time, 4 total.  Let them set a few minutes. Low and slow is the way to go! 
Once the pancakes are set and bubbles are forming at the top, flip them. 
 
Let the pancakes cook another minute or two. 

Done! I mixed up some PB2 to top it, but you could use lite syrup, blueberries, jam, anything! 
 

My recipe made 4 small pancakes. You could do two larger ones if you use a larger pan.
